Ingredients

• For the Haggis (approachable home version):
• 1 lb lamb offal (heart, liver, and lungs) or substitute lamb mince and chicken liver
• 1 medium onion, finely chopped
• 1 cup steel-cut oats, toasted
• 1/2 lb suet or lamb fat, finely chopped
• 2 tsp salt
• 1 tsp freshly ground black pepper
• 1 tsp ground coriander
• 1/2 tsp ground allspice
• 1/4 tsp freshly grated nutmeg
• 1/4 tsp cayenne pepper
• 1 cup lamb or chicken stock
• For Neeps (Turnip/Swede):
• 1 large swede (rutabaga), peeled and cut into chunks
• 3 tbsp unsalted butter
• Salt, white pepper, and freshly grated nutmeg
• For Tatties (Mashed Potato):
• 2 lbs Maris Piper or Yukon Gold potatoes, peeled and quartered
• 4 tbsp unsalted butter
• 1/2 cup warm whole milk
• Salt and white pepper to taste
