Filet mignon (asado)

Ingredients

4 filet mignon steaks (6 to 8 oz each, at least 1.5 inches thick)
2 tsp kosher salt
1 tsp freshly ground black pepper
2 tbsp olive oil
4 sprigs fresh thyme
4 sprigs fresh rosemary
4 cloves garlic, lightly smashed
4 tbsp unsalted butter
For chimichurri sauce (essential asado accompaniment):
1 cup fresh flat-leaf parsley, finely chopped
4 cloves garlic, minced
1/4 cup fresh oregano leaves, finely chopped
1/2 cup olive oil
3 tbsp red wine vinegar
1 tsp red pepper flakes
1/2 tsp dried cumin
1 tsp salt
1/2 tsp freshly ground black pepper
