Ingredients

4 Australian Wagyu New York strip steaks (10 to 12 oz each, BMS 7 or higher preferred)
1.5 tsp sea salt flakes
1 tsp cracked black pepper
2 tbsp grapeseed or avocado oil
4 tbsp unsalted butter
4 sprigs fresh thyme
2 cloves garlic, lightly crushed
For bush herb butter (optional):
1/2 cup (1 stick) softened unsalted butter
2 tsp fresh lemon thyme leaves
1 tsp fresh rosemary, finely chopped
1 tsp sea salt
1 tsp lemon zest
